Second Act Artisan Cheese - Let's Make Cheese!

Recently I took a cheese-making class at Second Act Artisan Cheese. Specifically, I took the Cheese Express Class, which is 3 hours long and you make 2 quick cheeses: Ricotta and Fromage Facile. It was so much fun! Plus end-result was delicious!

I highly recommend this to anyone that loves cheese.

After a brief introduction about the process of cheese-making, we got right down to it and started making our own cheeses. OK, so it was under the supervision and guidance of Rich Nathan. He is the owner and instructor at Second Act Artisan Cheese.

After we finished making the cheeses, Rich and his lovely wife Lauren, showed us to a beautiful dining room (seriously, it looked straight out of a magazine). We sat, relaxed and enjoyed a sampling of each cheese that we made. Although we made 2 types of cheeses, we actually made 6 varieties. (Some with green onions, dill, Provence seasoning, lemon/orange zest and a couple of spicy-ish ones).

We even got to enjoy a chocolate-y cheese. Sounds odd, but think cheesecake, as in chocolate cheesecake. This was essentially the dessert portion of the evening and it was was beyond words. As the kids say, I CAN'T EVEN... I mean.... it was THAT good. So rich, smooth & flavorful.

Also, as a special treat, Rich brought out a sampling board of aged cheeses for us to try. He has workshops about how to make these cheeses too.

Go solo or get a few friends together and go as a group, or make it a date-night with your significant other. 🎉
